Delaware Phoenix Distillery, located in the village of Walton near the banks of the Delaware River, produces artisanal absinthes. The absinthe, hand-crafted with a nostalgic blend of classic European and regional herbs and pure Catskill waters, is produced in a 30 liter, traditional copper still. Individually numbered bottles represent the uniqueness of their small batch production. Thus, there is natural variation from each batch.
Named after the green reflection from the trees on the waters of the Delaware as it courses through Walton, Walton Waters is a balanced yet playful blend of grand wormwood, anise, fennel, roman wormwood, hyssop, lemon balm and lemon thyme added as a subtle accent. Also now available from Delaware Phoenix is 'The Meadow of Love".This is made with Violet and is has a slightly more bitter (and spicier) presence then the Walton but equally as good in its own unique way.
